How about:

"I thank you for having me, will accompany you on your journeys. I learned a lot, which will be invaluable. Your contribution of time and expertise, we are very grateful."

Letter of thanks are also easy to write, but too much for many people. Just to say thank you to [what they did], and how you are affected. Add a few details and be honest and remember that even a sucky thank you note is better than nothing. :)

Thank you for the opportunity to live a day in your career, but it really helps me on my future classes and a solid understanding that the road to concentrate on. Particularly appreciated his explanation for something that will see [something], and that [blah, blah, blah]. Thank you for all your support and keep up to date.

Regards,
